Crawfish Etouffee

A simple recipe, serve over rice or get creative!

1 lbs peeled crawfish

1 medium onion chopped

1/2 cup chopped celery

1/4 cup chopped bell pepper

1 tsp chopped garlic

2 sticks of butter

salt

Cajun seasoning

Melt 1 stick of butter over medium heat.  Add onions, add vegetables and saute for about 10 minutes, stirring frequently.  Add garlic, continuing to stir.  Once cooked well, add crawfish tails and the second stick of butter.

Season to taste, reduce heat to medium-low, and simmer for 20-minutes, stirring frequently.

Serve over rice of get creative!
