1 tbsp oil or butter 1 onion chopped 1-2 large carrots sliced 2 ribs celery chopped 8 oz med./broad egg noodles 2-3 cups rotisserie chicken meat 8 cups chicken broth or stock 1-2 cups ...Read more
1 tbsp oil or butter
1 onion chopped
1-2 large carrots sliced
2 ribs celery chopped
8 oz med./broad egg noodles
2-3 cups rotisserie chicken meat
8 cups chicken broth or stock
1-2 cups water
seasoning to taste
Heat butter or oil in 6 quart pot over medium heat. When hot, add vegetables and cook about 5 minutes until onions are translucent.
Add the rest of the ingredients (except noodles) and bring to a boil over high heat. Reduce to medium heat and cook until vegetables are nearly tender (about 10 minutes).
Add noodles, bring to a heavy simmer. Put lid over pot and cook another 10 minutes until noodles are tender.
