Chili
5 lbs ground meat
1/2 chopped onion
1/2 chopped bell pepper
tablespoon of garlic
1 60z can of tomato paste
1/2 cup of chili powder
6 cups of water
3 tablespoons of beef base
cajun seasoning to taste
2 tablespoons of sugar
1/2 cup of white roux
In a large stockpot over high heat, cook the ground beef until completely browned and drain. Lower to medium heat and add onions, bell pepper, and garlic. Cook until onions become translucent (about 10 - 15 minutes).
Add tomato paste and chili powder and mix well until completely dissolved. Add water and bring to a boil on high heat. Add beef base and mix until completely dissolved. Once dissolved, add seasoning and sugar and reduce the heat to low/medium. Add white roux and stir until dissolved, then let cook for 1 1/2 hours.
